"I found this recipe on, but I found myself making so many substitutions that it just needed to be resubmitted under a different name. I make a batch every couple of days for a quick and healthy breakfast, or a guilt free snack. Eat as many as you want, they're good for you!"

  1. 1. Preheat oven to 375 F, grease muffin tin or line with paper muffin cups 2. Mix together the milk and lemon juice, stir it into the wheat bran in a large bowl and let it sit 10 minutes 3. Add the flax seeds to the water in a smaller bowl and let it sit 2 minutes before adding the honey, apple sauce and vanilla extract, mixing well 4. Combine the flax mixture with the bran mixture 5. Sift together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt and combine the dry mixture with the bran mixture in a few swift strokes 6. Fold in the apple 7. Divide batter into the muffin cups and bake for 15 to 20 minutes until a toothpick inserted into the center comes out clean.
