  1. Preheat oven to 350 degrees. Line cookie sheet with a silpat or parchment.
  2. In a food processor, pulse the rolled oats, flours, walnuts, baking soda and salt. Pour into a large bowl.
  3. Add the peanut butter, butter and sugars to the processor. Process for about a minute. Add the eggs and vanilla. Pulse until completely incorporated.
  4. Pour the wet on top of the dry, add the chocolate chips and mix until combined (the batter will be very thick).
  5. Using a cookie scooper, drop cookies onto prepared cookie sheet and press down slightly.
  6. Bake for 7-8 minutes. The cookies will look a little undone, but will firm up while they cool.
  7. Let cool on the baking sheet for five minutes. Then transfer the cookies onto a wire rack to cool.
