  1. In a large stock pot brown hamburger, sausage, onion, and bell peppers.
  2. In a smaller pot add approx. 1 qt of chicken stock and bring it to a rolling simmer. Once simmering add in toasted cumin seeds, ancho chillies, and tortilla chips. Let it simmer for about 5 min, or until chips are soggy. Once everything has simmered place in a blender a blend up mixture. Then set aside.
  3. Once meat is browned and veg is sauteed add in the beer, and bring to a simmer. Once it's up to temperature and the bottom of the pan is deglazed add in blended mixture, and the rest of the chicken stock. Also add in all seasonings plus garlic.
  4. Bring everything to a boil, then to a nice slow simmer. Go nice low and slow and let it reduce by half.
