  1. Sautee onion & garlic. Set aside.
  2. Boil potatoes & carrots in water or broth, reducing heat when the soften
  3. Add onion, garlic, corn and spices (but not basil)
  4. Take out some of the liquid/broth and slowly stir in corn starch, avoiding clumping as it dissolves
  5. Stir thickened mixture back in with vegetables and add milk
  6. Add spinach and celery. Simmer about 15 minutes.
  7. Add salmon. [If fresh or frozen, add slices. If canned, add the juice & mash up the salmon (and even vertebra)]
  8. Simmer until thick.
  9. Top with basil leaves (not just a garnish) for flavor
