  1. Preheat oven to 350 deg.
  2. Leaving rind on, cut lemon in small chunks, remove seeds,,
  3. In a blender or food processor, blend together lemon, eggs, butter, vanilla and sugar
  4. Until smooth and creamy (should be fairly runny). Pour into unbaked pie shell.
  5. Bake at 350 for about 40 minutes. If crust becomes too brown, cover with foil ring.
  6. Serve with whip cream.
