  1. Preheat oven to 425 degrees F.
  2. Places cubed squash on a cookie sheet and drizzle with olive oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Roast in oven for 30 minutes until soft and browned, keep warm.
  3. In a large pot, cook pasta per package directions and don't forget to salt water.
  4. Once cooked, drain pasta into colander reserving 1 cup of the pasta water.
  5. In the same pot, over medium heat, melt butter and cook until bubbly and slightly brown.
  6. Add garlic and pine nuts and saute for 2 minutes.
  7. Add cooked pasta, arugula, cheese, pepper and enough reserved pasta water to combine the mixture and melt the cheese.
  8. Transfer pasta to plates and top with roasted squash and more parmesan cheese.
