  1. Preheat oven to 375 degrees Fahrenheit
  2. In 2 small bowls obtain the juice and zest from the lemons and set aside
  3. In a large mixing bowl add butter and sugar and cream together until soft and smooth
  4. Add the zest to the creamed mixture and stir until well combined
  5. Slowly add the juice to the mixture (some juice will not be absorbed right away)
  6. Add the dry ingredients stirring until most of the lemon juice is absorbed by the flour
  7. Stir in the quick oats and make a smooth drop dough
  8. On a large cookie sheet covered with parchment paper drop dough by teaspoonfuls 2 inches apart
  9. Put in oven for 7 to 9 minutes when cookies are lightly browned on top
  10. Remove cookies from oven and let cool in pan for a few minutes before removing to a wire rack to cool completely.
