  1. Preheat oven to 350. Spray 10 muffin tins with non-stick cooking spray or line with muffin liners. Set aside.
  2. In a large bowl gently toss flour and baking soda. Set aside. In a separate bowl, mix the brown sugar, white sugar, vanilla and applesauce until no brown sugar lumps remain. Add the beaten egg white until fully incorporated. Add the wet ingredients to the dry ingredients until just combined-DO NOT OVER MIX. Fold in straberries and chocolate chips.
  3. Divide batter among muffin cups. Bake for 15-20 minutes. Toothpick inserted near center will come out clean. Allow muffins to cool and enjoy.
