Preheat oven to 350 degree F. Line a muffin tin with 12 paper liners.
In a large bowl, mix together the flour, sugar, baking soda, cinnamon, and salt. Stir in the grated carrot, raisins, nuts, coconut, and shredded apple.
In a separate bowl, beat together the eggs, olive oil, and vanilla.
Stir the egg mixture into the flour mixture until batter is just combined. Spoon batter into the lined muffin tin, filling to the top. Bake in preheated oven for about 20 minutes or until toothpick inserted in the center comes out clean.
