Tea Cakes

Tori Guy

"This tender little cake is soft and pillowy, with just a touch of sweetness. A very simple and comforting flavor, they are generally only iced for company or special occasions, at other times getting only a light sprinkling of sugar as they come out of the oven."

  1. Cream butter and sugar. Add slightly beaten eggs, milk, vanilla, and nutmeg and stir well. Mix buttermilk and soda and then add and stir mixture. Mix in enough flour to make a soft dough. Roll thin, cut into strips lengthwise, then across, to make squares and rectangles. Place in greased pans and bake at 400° for 10 to 12 minutes.
