  1. In a mixing bowl add mixed greens, spinach, and arugula. Need about a 50/50 mix of greens and spinach. Use arugula for taste as it gives a spicy/pepper flavor.
  2. Place sliced baguette onto baking sheet and top with Parmesan cheese, fresh herbs, and salt and pepper to taste. Bake in oven for 10 min at 350 degrees, or until golden brown and crispy.
  3. Prep all fruit and use for garnish on salad.
  4. In a small mixing bowl add Roma tomatoes, kalamata olives, capers, basil, and garlic and fold together. (if you have any left over herbs from croutons add to this as well).
  5. Plate salad with even distribution of fruits. Place crouton on the side and top with tomato/olive relish. Sprinkle plate with Parmesan cheese and serve.
