"The original recipe was created by Julie Lohre, my fitness coach. I think it's more of a cake than brownie consistency. It wasn’t sweet enough for my taste, so I added the Splenda and vanilla, then increased the baking soda by 1/2 teaspoon since Splenda often makes a recipe have trouble rising."
Mix together oat flour, UMP, cocoa, baking soda and salt in a bowl and set aside. In a separate bowl, blend together the peanut butter and yogurt. Add the applesauce and mix thoroughly. Stir in the sugar. Add the egg whites and vanilla and blend. Stir in the milk. By hand mix the dry ingredients into the wet.
Bake 25 minutes or until toothpick comes out clean. Cut into 8 bars when warm or cool.
