Original recipe yields 4 servings

  1. Peel potatoes, cook in lightly salted water in a saucepan, until soft;
  2. Drain, dry out a bit, season and mash with a little milk;
  3. Combine and blend the fresh salmon with smoked salmon with a blender or in a food processor.
  4. Mix in and combine well spring onion, dill, lemon zest and juice to taste, egg yolk and seasoning;
  5. Add mashed potatoes to thicken mixture sufficiently to roll into balls;
  6. Roll mixture into balls, coat with breadcrumbs and flatten into burger shapes;
  7. Set aside on tray, cover with clingfilm and chill in the fridge for an hour or so;
  8. Heat oil in large frying pan, add burgers and cook on medium heat, turning to ensure golden brown on both sides, until fish is just cooked through.
