Original recipe yields 4 servings

  1. Melt butter and 2 T olive oil in large, heavy-based pan.
  2. Fry the bacon till fat renders.
  3. Add chicken pieces and brown.
  4. Now add capers, thyme, rosemary, bay leaves, dried parsley and garlic.
  5. Then add wine.
  6. Simmer for 15min with lid on pan.
  7. Now add stock and cook approx 40 min without lid. Season to taste.
  8. In a seperate saucepan add 1T olive oil. Toss sage leaves quickly in hot oil to crisp. Remove and drain on kitchen towel paper.
  9. When chicken is cooked, serve on bed of Basmati rice. Garnish with sage leaves.
  10. Remember to remove rosemary and thyme sprigs as well as bay leaves.
  11. Generously scoop sauce over meal.
  12. For a veg side I added pureed butternut seasoned with a pinch of salt and cinnamon.
