Easy Chicken Parmesan Without the Breading

"A super quick and easy, much lighter version of chicken paremsan. My kids and I actually like this better than the orignial breaded version. During the summer I substitue with grilled chicken breasts for an even tastier dish. Grill batches of grilled chicken and freeze. Substitue the frozen, already cooked chicken breast for the uncooked chicken breast called for in the recipie."

  1. Preheat oven to 350.
  2. Spray the bottom of a 8x8 glass baking dish with cooking spray.
  3. Season the chicken with salt, pepper and garlic powder to taste.
  4. Spread enough spaghetti sauce over the bottom of the baking dish to cover.
  5. Arrange the chicken in a single layer in the baking dish.
  6. Spread spaghetti sauce over the top of the chicken to cover well.
  7. Cover with foil and bake 25 minutes.
  8. While the chicken is baking combine the two cheeses.
  9. When the chicken is done, top the chicken with the cheese and return to the oven uncovered for 5 minutes or until the cheese melts.
