  1. 1. Preheat oven to 300 degrees.
  2. 2. Whisk the egg white in a cup. Pour the whisked egg white over the nuts, stirring until the nuts are well-coated.
  3. 2. In a separate bowl, mix the cinnamon and sugar together. Mix in the salt well and then add the vanilla, stirring together.
  4. 3. Add the cinnamon/sugar mixture to the nuts a little at a time, while stirring, until it all has been incorporated.
  5. 4. Spread the coated nuts on an ungreased baking sheet. Bake for 20 minutes without stirring and remove from oven. Immediately use a spatula to remove the nuts from the hot baking sheet and allow to cool thoroughly before storing in tightly closed container.
