2. Whisk the egg white in a cup. Pour the whisked egg white over the nuts, stirring until the nuts are well-coated.
2. In a separate bowl, mix the cinnamon and sugar together. Mix in the salt well and then add the vanilla, stirring together.
3. Add the cinnamon/sugar mixture to the nuts a little at a time, while stirring, until it all has been incorporated.
4. Spread the coated nuts on an ungreased baking sheet. Bake for 20 minutes without stirring and remove from oven. Immediately use a spatula to remove the nuts from the hot baking sheet and allow to cool thoroughly before storing in tightly closed container.
