  1. Saute onions and garlic until onions are translucent.
  2. Add the meat substitute and brown for about 5 minutes.
  3. Add bell pepper and potatoes, plus the spices, salt and pepper.
  4. Cook for about 30 minutes, stirring occasionally. Add a little vegetable stock if needed to keep mixture wet.
  5. Fill warmed tortillas with about 3 T of potato mixture and any other toppings of your choice.
