  1. Mix together the mustard and mayonnaise in a small bowl.
  2. Combine the breadcrumbs, parmesan cheese, salt and pepper in a small bowl. Pour onto a large plate and spread out.
  3. Using a spoon or your fingers, spread a thin layer of the mustard/mayo mixture over the tenderloins.
  4. Roll tenderloins in the breadcrumb mixture.
  5. Place tenderloins in a glass baking dish.
  6. Bake in PREHEATED 450 degree oven for 15 minutes.
  7. After 15 minutes, turn oven temperature down to 350 degrees and continue baking for another 20 minutes or until done (inside temp should be 150-160 degrees.
  8. Allow meat to rest for 5 minutes before slicing. Slice into 1/2" medallions and serve with your favorite vegetable and starch if preferred.
