"Good brunch item or with fried eggs. I was trying to come up with a good brunch item because we were having friends over. I had some left over potatoes but didn't want the usual potato pancakes so I came up with this fecipe, It was a big hit! Everyone wanted the recipe so I thought I would post it here. I hope you enjoy if you are so kind as to try them!!"

  1. Preheat oven to 425 degrees
  2. Spray a large muffin pan with 6 cups heavily with pam.
  3. Caramalize onion, corn and Jalapeno in 1 tsp butter
  4. Then mix all ingredients together, spoon into muffin pan.(be sure to fill all cups completely full, will not run over)
  5. Place into 450 degree oven and cook for 30 minutes and start watching the edges. When they are nice and brown turn on your broiler to high and watch closely until to tops are nice and brown
