  1. Peel potatoes and quarter,boil in water until tender. dice onion, celery,green onion and ham, suate in olive oil and 2 Tbblsp butter,drain potatoes and return to pot add remaining butter cooked onion/ celery mixture add seasonings and ham, chicken stock and milk,blend with a pot blender and reduce to a creamy textureadd small amounts of water so that soup is not too thick..
  2. serve in bolwls or cups and you can add cheddar cheese or what ever topping that suit your taste.
