"This is a modified recipe from my childhood. My mother made a "hot crab dip" for New Years and for Superbowl Sunday. It was always the highlight of the hors d'oeuvres."

  1. Preheat oven to 350 degrees
  2. Mix together all ingredients, saving about 1/4 cup of the shredded cheddar for the topping
  3. (taste)
  4. Add more horse radish, salt, or pepper as needed
  5. Pour into an appropriately sized oven-safe casserole
  6. Top with the remaining cheddar cheese
  7. Garnish with more roasted red pepper if desired
  8. Bake for about an hour or until top is golden brown and bubbly
  9. Allow to cool for 10 to 15 minutes and serve warm with crackers, bread sticks, or good bread
