  1. Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
  2. Brown sausage in a large skillet; drain fat.
  3. Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese.
  4. Saute mushrooms in 2 tsp butter, spread mushrooms over cheese.
  5. Layer thinly sliced zucchini over mushrooms.
  6. Whisk together eggs, and gravy; poor mixture over zucchini.
  7. Melt 2 tsp of butter in medium bowl, add oil, salt, pepper, and onion powder to taste, fold in frozen shredded potatoes. Spread shredded potato mixture over all.
  8. Bake 40 minutes in the preheated oven, broil for 8 minuets on low to brown. Set aside 5 minutes before serving.
