  1. preheat oven to 350 degrees f.
  2. peel and core apples. place apples, coconut, almonds, cinnamon,coconut oil, ground flax and vanilla in food processor. blend until finely chopped.
  3. Add bananas and pulse until mixed in
  4. Crack eggs in mixing bowl. Add mixture from food processor and stir into eggs by hand. add cranberries and stir into final mixture.
  5. Place spoonfulls of cookie mixture onto cookie sheet lined with parchment paper. Bake for 30 minutes at 350 degrees f
