  1. Preheat oven to 350 degrees.
  2. Add eggs, brownie mix, and vegetable oil to a large mixing bowl. Beat 30-40 strokes or until mixture becomes sticky.
  3. Add morsels and fold into the mixture.
  4. Scoop out tablespoon size amounts of the mixture and roll into balls with your hands. Wetting your hands with water will keep the mixture from sticking.
  5. Place the balls onto a cookie tray, prepared with parchment paper, about 2 inches apart. Bake 8-10 minutes.
  6. Frosting: Beat 1 stick of butter in a large mixing bowl on low speed. Add in sifted powdered sugar and beat until the sugar is mixed in with the butter. Add vanilla extract and milk. Continue to beat until fully mixed.
  7. When the brownie cookies are finished baking, place them on a cooling rack. Once cool, spread some frosting onto one cookie. Sprinkle coconut flakes onto the frosting and place another cookie on top.
  8. Continue doing this for each whoopie pie.
