  1. 1. In a large bowl, beat butter and sugar until creamy.
  2. 2. Add egg yolk, vanilla and lemon peel.
  3. 3. In another bowl, stir together flour and salt.
  4. 4. Gradually add butter mixture, blending thoroughly.
  5. 5. Shape dough into ropes about 3/4 inch in diameter and as long as your baking sheets.
  6. 6. Place them about 2 inches apart on ungreased baking sheets.
  7. 7. With the side of your finger, press a long groove down the center of each rope.
  8. 8. Bake at 375F for 10 min.
  9. 9. Remove from oven and spoon jam into the grooves.
  10. 10. Return to oven for 5-10 min or until the cookies are firm to touch and golden brown.
  11. 11. While cookies are hot, drizzle them with powdered sugar mixture.
  12. 12. Cut at 45 degree angle into 1-inch lengths
