  1. preheat oven to 350 degrees.
  2. lightly beat eggs.
  3. add milk, maple syrup and vanilla and gently beat till incorporated.
  4. pour liquid into 1/2 c. ramekins
  5. bake cups in water bath (use hot water and fill baking dish to cover ramekins half way).
  6. bake for 35 - 45 minutes or until knife inserted in center pulls away clean.
  7. when done baking remove ramekins from water bath and allow to cool.
  8. chill well before serving.
