  1. Season flour with salt, pepper, and 1/2 of hte cajun seasoning.
  2. Dredge chicken pieces in seasoned flour and fry in hot oil over medium heat until browned.
  3. Remove chicken and retain about 1 tablespoon of the oil.
  4. Add the margarine to the pan and melt. Add remaining seasoned flour. If none is remaining, add 1/4 cup flour.
  5. Stir slowly until the mixture is light brown.
  6. Add onions, garlic, and celery. Cook 5-7 minutes until soft.
  7. Add stock, seasonings, worcestershire sauce, and wine and stir until thoroughly mixed. Add chicken back to pot and cook covered on medium low for 30 minutes.
  8. Remove Bay leaves
  9. Serve over rice.
