  1. Melt butter into oil over medium heat.
  2. Add vegetables and sautee until tender.
  3. Add chicken broth, bring to a boil and then reduce heat to simmer for 30 minutes.
  4. Blend milk and flour and then whisk mixture into broth.
  5. Add cheeses and parsley,and cook until thickened and bubbling, stirring frequently.
