Chocolate Peanut Puffs


"This is a variation of the Chow Mein clusters that you often see around Christmas time! It's easy to do with the cereal you have in your cupboard; in fact, that's how I invented the recipe! The Rice Krispies make it reminiscent of a Nestle Crunch bar."

  1. Set up a double-boiler on low heat. Put cookie trays into freezer to cool them.
  2. Add 1 1/2 cups of each type of chips to double-boiler, and mix continuously over low heat. To prevent scorching, make sure that you do not heat the chocolate too fast.
  3. When chips are nearly melted, add remaining chips and stir until completely melted.
  4. Add peanuts to chocolate and Rice Krispies to mixture and coat thoroughly. Add some extra cereal if your mixture looks too chocolately.
  5. Remove cookie trays from freezer and cover them with wax paper. Remove chocolate mixture from heat and drop spoonfuls of it onto the wax paper. Heap the cookies into tidy piles for visual appeal.
  6. Put full trays into the fridge for approximately 15-20 minutes to let the chocolate harden.
  7. Remove cookies from tray and store in a sealed container, with wax paper between the cookie layers to prevent them from sticking. Keep refrigerated!
