  1. Saute onion in olive oil. While onion is cooking, chop carrots and add to onion. Then chop celery and add to onion and carrot mixture. Repeat with bell pepper, sweet potato and finally with garlic.
  2. Cook entire mixture for 5 minutes on medium, but don't burn.
  3. Add the other ingredients, cover and simmer for 40-50 minutes.
  4. Serve over rice or quinoa.
