Sweet Broccoli, Bacon & Cream Cheese Soup

  1. • Melt butter and add oil to a non stick frying pan, sauté diced celery and onion until transparent.
  2. • Place water and chicken soup mix or stock in 2 quart saucepan place on med/high heat
  3. • Add diced broccoli , simmer 15 minutes
  4. • Add bacon bits, mashed potatoes (or dry potato flakes and pepper; simmer 15 minutes longer.
  5. • Puree in blender or with hand held blender if a very smooth consistency is desired.
  6. • Mix flour in small amount of water and add to soup stirring to blend until thickened.
  7. • Add milk, cream cheese and chez whiz to soup and SIMMER to serving temperature. Never boil soup in which milk has been added.
  8. • Season the soup with salt and pepper to taste. serve with Crackers and a favorite sandwich.
