In a large kettle, soak the beans overnight covered in water or follow package directions for quick soak method. Next, add 2 quarts of water, add ham bone, bring to boil, skim off fat and dirty water....do a dance cause it just smells so good! Cover and simmer on stove until beans fall apart, a good 2 hours to savor the flavor! Add potatoes, onion, celery & garlic. Simmer for another hour and do another little dance....now go read that new book you've been avoiding and enjoy it! Remove ham bone and cut up the meat. Give bone to da dogz!!! Return meat to soup after a ppl and puss taste test. If desired, mash soup against side of kettle to thicken. Garnish, if desired, with cracked up pepper and a little chopped kosher dill pickle. Mmmm! HOT FLASH: makes about 4 qts and can be frozen for later. Serve with pipin hot corn bread dripping with butter and sweet tea.
