"Necessity is the mother of invention - and this recipe! After discovering that we didn't have the ingredients for our original Thanksgiving appetizer, we created this out of the ingredients we DID have. Now we have a new holiday favorite AND a great dip to take to parties and tailgates!"
Pre-heat oven to 350 degrees. Saute spinach and garlic in skillet, along with salt and pepper, until garlic is fragrant and spinach is warmed through. In a separate bowl, add cream cheese, sour cream, hearts of palm, water chestnuts, and half of the shredded mozzarella cheese. Stir in spinach and mix until well-blended. Pour into a greased casserole dish. Top with remaining mozzarella and then sprinkle with parmesan cheese. Cook for 20 – 25 minutes, or until golden bubbly. Serve warm with pita chips.
