Rinse lentils and set aside. It is a mistake to think that they should be soaked. Do not soak these.
In a large pot or stock pot over medium-high heat, saute onions in olive oil till browned stirring only occasionally, approximately 10 minutes. Add mushrooms, garlic, and red bell pepper, and continue cooking over medium-high heat while stirring for approximately 4 more minutes.
Add vegetable broth, spices, lentils, and tomato paste. Stir well and bring to a boil. Cover and simmer over low to medium-low heat for 1 hour, until lentils are tender.
