Accidental Apples and Sweet Potatoes


"I experimented with a glaze for a small ham, and had more left over than I'd anticipated. I also had a sweet potato and apple left and it was the day before payday. I put them together with the glaze, and we were amazed at how it turned out. My husband had people begging for samples after the smell of them filled his lunch room when he warmed them up. Now I have to bring it to all the holiday functions."

  1. 1. Preheat oven to 350 degrees F.
  2. 2. In small bowl, whisk together brown sugar, apple juice concentrate, dijon, rosemary, nutmeg, pepper and salt.
  3. 3. Use food processor to slice sweet potato. Slice apples, by hand or with processor.
  4. 4. Layer sweet potatoes then apples then sweet potatoes in a medium-sized casserole dish or oven-safe skillet.
  5. 5. Pour apple juice mixture over sweet potatoes and apples.
  6. 6. Cover with foil and bake 30 minutes, or until tender. Serve.
