  1. Place all dough ingredients in a bowl and beat until well combined. Knead for 5 minutes until it's soft, smooth, and slack. Dust the dough with flour and place in a plastic bag to rise, about 30 minutes.
  2. Preheat oven to 500 degrees F. Prepare baking sheets with parchment paper or by spraying sheets with vegetable oil.
  3. Transfer dough to a lightly greased work surface and divide into 8 equal pieces and let rest uncovered for 5 minutes.
  4. Roll each piece of dough into a long, thin rope and twist each one into a pretzel shape. Dip the pretzels in the warm water mixed with 1 teaspoon sugar and place them on baking sheets. Sprinkle them lightly with salt and let rest uncovered for 10 minutes.
  5. Bake the pretzels for 8-9 minutes, until golden brown, reversing the baking sheets halfway through.
  6. Remove the pretzels from the oven and brush them thoroughly with melted butter (keep going until all the butter is used).
