Place all dough ingredients in a bowl and beat until well combined. Knead for 5 minutes until it's soft, smooth, and slack. Dust the dough with flour and place in a plastic bag to rise, about 30 minutes.
Preheat oven to 500 degrees F. Prepare baking sheets with parchment paper or by spraying sheets with vegetable oil.
Transfer dough to a lightly greased work surface and divide into 8 equal pieces and let rest uncovered for 5 minutes.
Roll each piece of dough into a long, thin rope and twist each one into a pretzel shape. Dip the pretzels in the warm water mixed with 1 teaspoon sugar and place them on baking sheets. Sprinkle them lightly with salt and let rest uncovered for 10 minutes.
Bake the pretzels for 8-9 minutes, until golden brown, reversing the baking sheets halfway through.
Remove the pretzels from the oven and brush them thoroughly with melted butter (keep going until all the butter is used).
