add chopped onion just before beef is fully cooked about 5 minutes left.
Shut off the heat. Let cool. Add the prepared rice, beans,cheese, green chili and 16oz green enchilada sauce. Combine all ingredients together.
In a 9X12 baking dish spray with cooking spray. Roll a few tablespoons of the meat mixture onto a flour tortilla at the end, roll, and lay into dish and repeat. I always cut off the ends of the whole stack of tortillas to fit them into the baking dish properly. Once the dish is full, pour the green sauce over the top of the enchiladas until fully covered. Top with more cheese down the middle of the dish sprinkle the chopped olives and diced tomatos over the top cover with foil and bake at 350 degrees until fully heated around 20-25 minutes. You can also cover the dish in foil and freeze for another time. Just thaw and heat in oven 30-45 min between 300-350 degrees. My enchiladas have been crowd pleasers for the last 20 years!!
