  1. Rinse and drain the lentils, set aside. In a medium size pot combine water, olive oil, lentils, seasoning and bring to a boil. Add Succotash, Rotel, and Prego until desired consistency (the more Rotel and Prego, the more soupy.) Add a dash or two of crushed red pepper. Stir well. Cover and simmer for 35-40 mins or until lentils reach desired tenderness (cook longer for softer lentils.)
