  1. Remove the outer set of leaves of cabbage. Cut into quarters and remove white stem. Chop finely.
  2. Melt butter (avoid aluminum pots) Blanch cabbage a few minutes at medium heat. Add vinegar immediate - it help the cabbage keep a nice red color.
  3. Add cranberry juice, salt and sugar.
  4. Simmer covered at low heat for 1 to 1 1/4 hour. Stir occasionally. The cabbage should be soft without being mushy. Add more sugar towards the end if it is tart.
