  1. Place all dry ingredients into one bowl. Whip egg whites until peaks start to form. Mix the coconut milk and egg together and then add to dry ingredients. Only mix enough to moisten the flour. Gently fold the egg whites into the wet mixture.
  2. Pour onto hot, oiled waffle iron. Cook until done. (On my waffle iron, which has a temperature dial, I cooked it on medium dark for 12 minutes.)
