Wild Rice Stuffing

"A very easy to make side dish that can replace traditional stuffing or work along beside it. It will not leave you "stuffed" and has a nice blend of textures that will make you mant more. We enjoyed the left overs spooned into bowls with our homemade turkey soup poured over the top. Makes a nice, light, savy meal with a slice of corn bread or roll on the side."

  1. Preheat oven to 350.
  2. Make rice as directed on package.
  3. Meanwhile, cook sausage with onion and celery in deep frying pan. Drain excess grease.
  4. To toast pine nuts: Pour pine nuts into a shallow baking pan and place in your oven for 10 minutes. Cool on wire baking rack.
  5. In large bowl combine cooked rice with sausage mixture. Add mushrooms and toasted pine nuts.
  6. Pour mixture into a greased 13 x 11 baking pan. Cover with foil and heat through 30 minutes.
