Dredge chicken in the mayo and then dip into the breadcrumbs - here I usually add spices to the breadcrumbs, whatever I fancy at that moment. Sometimes I use Kraft Fresh Takes which has the added benefit of cheese.
Place chicken in baking dish (sprayed with cooking spray)
Saute the garlic in EVOO for about a minute
Combine the wine, oregano, thyme, lemon zest and lemon juice to the garlice - saute for an extra minute.
Pour over the chicken in the baking dish
Cut up 1 lemon (the ones you got the zest from) into wedges and place into the dish with the chicken
Bake for 30-40 minutes, until internal temp is 165F
