  1. Saute the onion in a nonstick pot until translucent. I don't use oil, but feel free if you usually do.
  2. Add celery and carrot, saute a little longer, 5 min or so.
  3. Add potatoes, beans, nutmeg, water, and bullion. Bring to boil and simmer until potatoes are tender, about 20 minutes.
  4. Use an immersion blender or remove about 1/3 of the soup to blender and cream some of it to thicken. Puree more to your liking.
  5. Add in greens and let simmer until they are soft, about 10 minutes. Add salt and pepper to your liking.
