John G's roasted turkey breast and stuffing

"This is my traditional turkey recipe for Thanksgiving. Since I live in Germany and usually only serve my own immediate family, no point in making an entire turkey, and they're hard to find anyway. Thanks to the bacon, it's largely self-basting, too, so you'll have lots of rich, juicy turkey meat to enjoy."

  1. Preheat oven to 450°F (225°C).
  2. Toss the melted butter, onions, carrots, parsley, thyme, rosemary, sage, and bread cubes in a pot or bowl. Set aside.
  3. Place the turkey in a roasting pan and drizzle the remaining butter over the turkey.
  4. Rub the herbs, spices, pepper and sea salt into the turkey breast.
  5. Drape the bacon over the turkey breast and place a slice of bacon inside the breast. If you have one, insert the meat thermometer into the center of the breast.
  6. Roast the turkey for 20 minutes, then baste it with half the chicken broth.
  7. Roast for another 20 minutes, then baste with the remaining broth. Add the stuffing around the turkey in the pan and toss in the pan drippings.
  8. Roast for another 20-40 minutes, or until the meat isn't pink when cut open, or (if you have one) until the meat thermometer reads 155°F (70°C).
