  1. Pre-heat oven to 350 F.
  2. Lightly grease a 12-muffin tin using olive oil or unflavoured coconut oil.
  3. Fry the grated cauliflower, garlic and onion in olive oil until the cauliflower is slightly translucent (about 6-8 minutes)and garlic and onions are soft. Place in a bowl and let cool.
  4. Place all other ingredients in a blender and blend until smooth.
  5. In a bowl combine both the cauliflower mixture and blended ingredients. Mix completely.
  6. Evenly spoon mixture into greased muffin tin. Press down into pan so they are even and flat.
  7. Place in your oven and bake for approx 30 minutes- until edges and tops are golden and crispy
  8. Remove from oven and let set until cool.
  9. Once cool remove from muffin tin (either by tipping them out or by running a thin knife down along the side and popping them out).
