Banana Spelt Muffins

  1. Preheat oven to 375 C.
  2. Lightly grease muffin pans *I use coconut oil
  3. Combine spelt flour, baking soda and salt.
  4. In a large bowl, mash the bananas then beat in brown sugar, maple syrup and honey. Add melted coconut oil, eggs and vanilla.
  5. Add the dry ingredients. Fold in pecans and chocolate.
  6. Place in greased muffin tins and top with ground flax seed if desired.
  7. Bake for 18 - 20 min. Allow to cool 5 min then remove from pan.
  8. Enjoy:)
