  1. Preheat your waffle iron.
  2. In a medium bowl, whisk together the egg yolks, vanilla, yogurt and water and applesauce until they’re well blended.
  3. In a separate bowl, combine the flour, baking powder, baking soda, sugar, salt and cinnamon; add this dry mixture into the buttermilk mixture.
  4. In a large glass bowl, whip the egg whites with an electric mixer until stiff. Fold egg whites into the batter.
  5. Spoon about a half a cup of batter onto the hot waffle iron, close, and cook until golden brown.
