  1. Put onions in large pot with ginger and vinegar. Bring to boil, then simmer for 10 minutes. Add the rest of the ingredients except rhubarb, plus 2 tsp. salt to the pot ad simmer for 10 mins.
  2. Stir i the rhubarb and cook, uncovered, until think and jammy, bout 15-20 mins. Spoon into sterile jars and seal.
