  1. 1.Heat 2 tbsp olive oil, onions, carrots, parsnips, beets, rutabaga & fennel over medium heat about 3 to five mins
  2. 2.Add 4 cups vegetable broth & bring to a boil.
  3. 3.Once boiling add lentils, 1/4 tbsp thyme, 2 bay leaves, & parsley.
  4. 4.Reduce to a simmer. Let simmer 35-45 minutes or until lentils are tender! Add salt & pepper to taste.
