  1. Preheat over to 350 degrees
  2. Separate 1 egg into a small bowl and whip until slightly frothy. Brush the edges of each pie crust with the egg white. Place the remaining yolk in a large mixing bowl and mix with the other egg.
  3. Combine the sweet potatoes, pumpkin pie mix, butter, sugar, milk, pumpkin pie spice, and vanilla extract in the mixing bowl with the eggs.
  4. Spoon mixture evenly into the 6 mini pie crusts and place in the oven for 15 minutes.
  5. Cool pies for 15 minutes and the place a tablespoon of whipped cream on top of each pie and then follow up with a single walnut on top of the whipped cream.
